Pan-fried skate wing

I saw fresh skate wing at the grocery store and decided to buy it. For cooking, I wanted to use this recipe https://basilandbubbly.com/pan-fried-skate-wing/ , as it seemed quick, straightforward and using ingredients that I liked. The cooking process was as quick and easy as the recipe promised, and I liked the end result — but unfortunately I was the only one! My family wasn’t enthusiastic about it at all, even though I thought the fish was rather tasty (similar in taste to any other white, not-too-oily fish; the cappers and lemon juice definitely add culinary interest). One reason for their lack of enthusiasm was that the skate wing when cooked turned out to be full of cartilage; we had to flake off the fish and ended up with a pile of cartilage — not a big deal for me, but the presentation of the dish definitely suffered, and it made dinner more cumbersome. I guess skate wing won’t be something I serve for other people!
